Italian Risotto

Risotto is a traditional Italian dish made from a specific type of rice called Arborio rice. The dish is made by cooking the rice in a broth or stock, along with other ingredients such as vegetables, meat, seafood, or cheese. Risotto is known for its creamy texture, which comes from the starch that is released from the rice as it is cooked.


To make a basic risotto, you will need:

1 1/2 cups Arborio rice

4 cups chicken or vegetable broth

1/2 onion, finely chopped

2 garlic cloves, minced

1/2 cup white wine

1/4 cup grated Parmesan cheese

2 tablespoons butter

Salt and pepper to taste


To prepare:

In a large pot, heat the broth and keep it simmering on low heat.

In another large pot or Dutch oven, melt the butter over medium heat. Add the onion and garlic and sauté until softened, about 2-3 minutes.

Add the Arborio rice to the pot and stir to coat with the butter. Toast the rice for about 1-2 minutes.

Add the white wine and stir until it is absorbed by the rice.

Begin adding the broth to the pot, one ladleful at a time, stirring constantly until the liquid is absorbed by the rice. Repeat this process until all of the broth has been added and the rice is cooked through and has a creamy texture. This should take about 18-20 minutes.

Stir in the grated Parmesan cheese and season with salt and pepper to taste.
