Here's a recipe for Moo Satay:
Ingredients:
- 1 lb. pork shoulder, sliced thinly into strips
- 1/4 cup soy sauce
- 2 tbsp. brown sugar
- 1 tbsp. fish sauce
- 1 tbsp. vegetable oil
- 1 tsp. turmeric
- 1 tsp. cumin
- 1/2 tsp. coriander
- 1/4 tsp. ground black pepper
- 12-15 wooden skewers, soaked in water for at least 30 minutes
Peanut Sauce:
- 1 cup unsweetened coconut milk
- 1/2 cup creamy peanut butter
- 2 tbsp. soy sauce
- 1 tbsp. brown sugar
- 1 tbsp. lime juice
- 1 tsp. red curry paste
- Cucumber Salad:
- 1 large cucumber, sliced thinly
- 1/2 small red onion, sliced thinly
- 2 tbsp. rice vinegar
- 1 tbsp. sugar
In a large bowl, whisk together soy sauce, brown sugar, fish sauce, vegetable oil, turmeric, cumin, coriander, and black pepper.
Add the pork strips to the bowl, and toss to coat with the marinade. Cover and refrigerate for at least 2 hours, or up to overnight.
Thread the pork strips onto the soaked skewers.
Heat a grill or grill pan to high heat.
Grill the pork skewers for 2-3 minutes per side, or until cooked through and slightly charred.
To make the peanut sauce, combine coconut milk, peanut butter, soy sauce, brown sugar, lime juice, and red curry paste in a saucepan over medium heat. Whisk until smooth and heated through.
To make the cucumber salad, combine cucumber, red onion, rice vinegar, and sugar in a bowl. Toss to combine.
Serve the grilled pork skewers with the peanut sauce and cucumber salad on the side.
